All-Time Favorites : Recipe Edition

This week has been sunny, cool, and full of those mid-60s, sweatshirt and jeans kind of days. Call it wishful thinking, but I half expect to turn on the TV to a college football game. Fall is hands down, my favorite season of the year. And this week, quite frankly, has made me nostalgic for the leaves, the pumpkins, the apple cider, and the tailgating it brings. So, I decided to do something about it. I chose to act as though it was fall. I put on my favorite Iowa Hawkeyes sweatshirt, rolled up my sleeves, and made two of my all-time favorite Autumn recipes, homemade macaroni and cheese and apple crisp.

Macaroni and Cheese
2 cups elbow macaroni, uncooked
1 lb Velveeta
½ cup milk
Pepper to taste (optional)

Cook macaroni as directed; drain. Return to large pan.
Stir in Velveeta and milk. Sprinkle with pepper, if desired.


Apple Crisp
Recipe modified from
1 1/4 cup brown sugar
1 1/4 cup rolled oats
1 cup all-purpose flour
¾ cup butter, melted
4 honeycrisp apples – peeled, cored and chopped
1/2 cup white sugar
1 teaspoon ground cinnamon

Preheat oven to 350 degrees. Lightly grease an 8-inch round pan.
In a large bowl, combine brown sugar, oats, flour and butter. Place half of crumb mixture in pan. Spread the apples evenly over crumb mixture. Sprinkle with sugar and cinnamon and top with remaining crumb mixture.
Bake in the preheated for 35 – 40 minutes, or until golden brown.
