All-Time Favorites : Recipe Edition

This week has been sunny, cool, and full of those mid-60s, sweatshirt and jeans kind of days. Call it wishful thinking, but I half expect to turn on the TV to a college football game. Fall is hands down, my favorite season of the year. And this week, quite frankly, has made me nostalgic for the leaves, the pumpkins, the apple cider, and the tailgating it brings. So, I decided to do something about it. I chose to act as though it was fall. I put on my favorite Iowa Hawkeyes sweatshirt, rolled up my sleeves, and made two of my all-time favorite Autumn recipes, homemade macaroni and cheese and apple crisp.

Macaroni and Cheese
Ingredients
2 cups elbow macaroni, uncooked
1 lb Velveeta
Β½ cup milk
Pepper to taste (optional)

Directions
Cook macaroni as directed; drain. Return to large pan.
Stir in Velveeta and milk. Sprinkle with pepper, if desired.

Apple Crisp
Recipe modified from http://allrecipes.com/recipe/apple-oatmeal-crisp/
Ingredients
1 1/4 cup brown sugar
1 1/4 cup rolled oats
1 cup all-purpose flour
ΒΎ cup butter, melted
4 honeycrisp apples – peeled, cored and chopped
1/2 cup white sugar
1 teaspoon ground cinnamon

Directions
Preheat oven to 350 degrees. Lightly grease an 8-inch round pan.
In a large bowl, combine brown sugar, oats, flour and butter. Place half of crumb mixture in pan. Spread the apples evenly over crumb mixture. Sprinkle with sugar and cinnamon and top with remaining crumb mixture.
Bake in the preheated for 35 – 40 minutes, or until golden brown.

  1. I adore fall and all the foods that come with it, but I have to say that I definitely do NOT want to see it yet. Fall is followed by winter, and I’ve had about as much winter as I can handle at this point… so bring on spring and summer πŸ˜€ Still, fall comfort foods are delicious. Apple crisp is fantastic, and I have to say that I’m kind of a sucker for chocolate chip pumpkin bread πŸ˜€

  4. This Sunday my mom is making homeade mac n cheese, along with a bunch of other southern casseroles for Easter and I can hardly wait to pig out! Too funny you mentioned being nostalgic for fall because thinking about eating all those casseroles coupled with the unusually cold weather we’re having here has made me miss Thanksgiving and Christmas!

  6. How fun πŸ™‚ Fall is WITHOUT A DOUBT my favorite season. I wish we could just skip spring and summer and head back to fall and winter. I love pumpkins, fall colors, ‘harvest’ decorations, squash, apples, comfort food, hoodies, 4-5PM evening skies πŸ™‚ AH I’m getting excited and we still have 5 months left!
